Sustainably caught fish, local organic produce

We serve wild salmon and other seafood from fisheries deemed sustainable by the Monterey Bay Aquarium and the Audubon Society. Besides environmental and health reasons for doing this, this fish just tastes better. Wild salmon is far better, and the price difference is negligible.

Similarly, we use organically grown fruits and vegetables, grains and flours. The differences from grower to grower are so great, however, that sometimes the conventionally grown produce is better. When everything is equal we buy what's local. After the meal, we serve organically grown, fair trade coffee as those are the beans used by the area's finest roasters. We decorate our displays with edible flowers from our garden at home.
